I made my own smoothie today again. I put in some frozen papayas, mangos, and strawberries, and protein and fiber like I always do. Then I added in some new things: Hallelujah Acres B-Flax-D, coconut water, coconut strawberry kefir, and a little shredded coconut too.
It was really, really good. I really love coconut, can you tell? I’m really getting good at this smoothie making thing! I also made enough this time, so it lasted all day.
I started dinner a little bit earlier today because I had a teleseminar later in the evening. This was going to be my first “real” meal since last Sunday, so I was really excited about it, and I was extremely hungry too.
The salad was supposed to be a “Tomato” salad with 3 tomatoes, but I don’t really like tomatoes, so I only used 1. I had a lot of cut-up cucumbers left over from last night’s soup, so I put in those, plus more, and made it into a “cucumber” salad instead.
The dressing for the salad was called “creamy pesto”, but there was a second dressing recipe there too for some reason. I made the second dressing first because it was so easy, and I was so hungry that I stuffed down an entire bowl of salad before I could even think about starting on the “creamy pesto” dressing recipe.
I did finally make it, and it turned out to be so good that I ate my second bowl of salad with the creamy pesto dressing. It was really tasty! Oh, and the pesto sauce was actually made from pine nuts, onion, olive oil, lemon, and a few other things.
Back to the extra dressing recipe, I found the same recipe a couple of pages down in the menu planner, so it must have been a “misprint” to have it in there twice.
